Considered to be the "classic" Chimay ale, it exhibits a considerable depth of fruity, peppery character. Also known as Chimay Triple and Cinq Cents in 75 cl (25.4 fl.oz.) bottles, this beer with its typical golden colour, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurized.

Chappys is the only tavern within 200 miles to offer this rare draught ale produced in a Trappist Monastery.

American triple hopped version of classic British India Pale Ale. IPA’s namesake lies in its colonial roots. British soldiers on their way to India consumed a lot of beer, but found it would go stale on long voyages. Meanwhile, brewers knew that by adding more hops, the beer would stay fresh.

Uses a yeast without the typical Bavarian phenolic, clove, banana aromas. Hop levels can be low to high. Wheat percentages often exceed 50% bottled. Light body, pale straw to gold color although darker versions exist.
 

Wittekerke Wit (Belgium) – 5.0%, Belgian Ale
Made with 50% bottled unmalted wheat and 50% bottled pale barley malt. Coriander and orange peel are often used as spices. Very pale and slightly cloudy from unfiltered yeast.

First brewed in the summer of ’98, the “Hippie” has become a Cleveland classic among hop lovers. Reminiscent of ales brewed on the Pacific west coast, the Hippie I.P.A. is big, rich in malt and chock full of hops. American malts are used in the grain bill, including pale ale, crystal, dextrin malt and torrified wheat. It is hopped five times with a combination of Northern Brewer and Cascade. After fermentation, hops are added “dry” to impart bold hop aroma.

One of the reasons is undoubtedly its unique taste. The secret lies in the water, which is still taken from the same well used well over 100 years ago.  The water from our well is unusually pure and soft. That allows us to add a touch more hops to create the Friesian-bitter taste that distinguishes Jever Pilsener from any other beer.

Our beer is basically a pale ale brewed from a relative low gravity, with some of the hops which would normally be used in the beer replaced by freshly ground ginger root. The beer is light in body, lower in alcohol, has a distinct ginger aroma, and has a very crisp finish. It was initially brewed as a refreshing alternative to the plethora of wheat beers which are popular in the summertime. Popular demand turned it into a year round beer.

Deep golden/copper, orange with a dense tan head. Caramel malts with moderate levels of citrus fruit and floral hops. Fruity, malty, with a touch of alcohol warmth and intense bitterness. Full bodied, warm, and bitter. Extremely smooth and delicious now, the alcohol notes should mellow with time, and the bitterness will allow for substantial aging.
